Even if the composition is in the public domain, the recording still falls under normal copyright laws.

Spleeter / FL Studio’s splitter to the rescue, although I’m not sure how powerful the algos are against just a bunch of string instruments. I could be bugged into trying anything though, for science, and siphoning them back if they’re good enough

I really wish I liked classical music but I’m too much of an idiot for that. It all just sounds like shit to me, maybe because it’s usually just a bunch of string instruments that all sound the same. Come to think of it, it kind of makes me feel emotionally nauseous which I’m sure is 100% normal
Asking around for permission to use private recordings could also work.
In many places the audience for classical music has been dwindling for a while and many orchestras and smaller ensembles are actively looking for new ideas.
You can also get midi notations for many classical pieces easily and then use your own instruments. If you want to keep it orchestral, you can go into something like Spitfire BBC SO for free (which will not sound as good as a real orchestra but if you’re just going to start chopping and sampling anyways then it should be good enough). Also, you could just go into synths at that point and start getting crazy with it.
Early on when I was learning theory and structure, I did exactly that with some Beethoven.
Good idea for a workaround.
In 2017 the Sydney Conservatorium of Music had a remix competition for Gustav Holsts: The Planets suite. It was recorded by the Conservatorium orchestra.
My remix wasn’t amazing, but I won the comp ($1500 prize money, which went to the purchase of my MPCX at the time). I wanted my remix to have “movements” like the orginal, so it takes you through several changes in mood. Here is the playlist of submissions so you can hear what people did, directly related to this topic.

Looking at the scores in the link you shared, it seems like a mixed bag.
I think copyright on scores is mainly about preventing someone from reprinting them without permission. You’re allowed to use them as basis for making music (that’s essentially what they’re for).
One thing I think is worth considering:
If you make a track with longer/recognisable samples from a famous recording like the one in the YouTube link bfk posted (David Nolan and London Philharmonic) it could potentially end up being flagged and removed automatically. Which would suck.
…and some labels might refuse releasing such a track due to the risk of having to pull it later.
So, if it’s possible to base your track on something with permission instead (private, CC or whatever), I think that’s generally a smarter solution.
Personally I’m not against sampling, by the way. Many of my favourite records would’ve been impossible to release if every sample on them had had to be cleared beforehand.
