The OP was stupid vague and shifted to how we organize pitch but here's some two cents...

How Equal Temperament Ruined Harmony by Ross W. Duffin is an awesome read. Basically a history of how we shifted from just intonation to equal temperament over the course of 300+ years or whatever. All in a pretty easy going writing style as well. And by we I mean us of the western persuasion who didn't grow up jammin' gamelan, traditional middle eastern, tuvan throat singing or anything.

I like to write music like I would for actual instruments so I'm definitely in the social/historical/cultural working harmony category but sometimes weird sounds are so what's up.
